To mark the occasion of Sponge Cake Day on 23rd August, Nicola baked a Marmalade Cake using Simon’s rich, dark & tangy Marmalade. This was a new recipe and the best so far for bringing out the flavour of Simon’s Marmalade. The cake was beautifully moist and gave a wonderful aroma whilst cooking. It was also very easy to make! Here is the recipe :
- 110g butter at room temperature
- 110g caster sugar
- 2 medium eggs, whisked
- 110g self raising flour, sieved
- 4 heaped tbsp Simon’s Marmalade
- Loaf tin lined with greaseproof paper
- Oven 170 deg C or 150 deg C Fan
Beat the butter and sugar, add the eggs a little at a time, beat in the flour, stir in 3 tbsp of Simon’s Marmalade.
Pour mixture into tin, bake for 40 mins or until the top of the cake is puffed up and cracked. Leave to cool in the tin for 30 mins then lift from tin. Once cold, warm the remaining 1 tbsp Simon’s Marmalade and pour over the top of the cake to glaze.
